Grocery List:
Fried Rice Groceries
- 1 – cup White Rice
- 2 – cups Water
- 1 – 8.5oz can of Sliced Carrots
- 1 – 8.5 oz can of Yellow Corn
- 1 – 8.5 oz can of Peas (optional)
- 1 – small Yellow Onion
- 1 – tsp Minced Garlic
- 1 – Tbsp butter or Olive Oil
- ½ – tsp Sesame Oil
- 1 – Tbsp Soy Sauce
- 2 – Eggs
General Tso Chicken Groceries
- 1½ lb of Chicken Breast
- ~½ cup of bread crumbs (more if needed)
- ~6 oz of General Tso Stir-Fry Sauce (I prefer House of Tsang, and this is about half of the bottle)
Recipe:
- Combine the white rice and water into a pot and bring to a boil, then simmer for 15-20 minutes or until the water is absorbed. Move the rice to the fridge for 2 hours.
- Note: Chilling the rice for 2 hours is optional, but having cold rice will allow us to brown it and help it from becoming mush
- Dice the onion and add it to the medium frying pan, you can also add the canned corn, carrots and peas. Sauté until soft (~15 minutes), meanwhile start the chicken:
- Cut the chicken breast into small nuggets, then coat in the bread crumbs and cook in the air fryer for 13 minutes at 370F.
- Add the butter to the large frying pan or wok over medium-high heat. Then, add the chilled white rice to the pan.
- Crack the eggs into a cup or small bowl and scramble them to break the yolks.
- Add the sesame oil, soy sauce, and eggs to the rice, and stir for a few minutes to cook the eggs.
- Add the sautéed veggies from the medium frying pan into the large frying pan to combine them with the rice and stir.
- In the medium frying pan, add the cooked breaded chicken nuggets and the General Tso Stir-Fry sauce over medium heat and stir these for a minute or two to coat the chicken
- Serve warm, left overs keep well in the fridge for a few days
Notes:
- You can change the combination of vegetables in the fried rice, we usually omit the peas for personal preference, but adding peppers, mushrooms, green onions, or cabbages is also tasty!
- Sesame Oil has a powerful flavor profile, and tastes nutty. If this is a new ingredient for you, I would strongly recommend adding the soy sauce first, then taste testing the rice. Then add the sesame oil and you should be able to pick out the flavor. Proceed with caution, it can take over the whole dish if you add too much.
- This recipe can be doubled, but the limiting factor is the size of your large frying pan or wok.
