Gyro Bowl

Servings: 2-3 large bowls

Cookware Needed:

  • pot or rice cooker
  • frying pan

Grocery List:

  • 1 – lb gyro meat
  • 1 – cup of chicken broth
  • ½ – cup white rice
  • 2 – roma tomatoes
  • ½ – cucumber
  • ~2 – tsp feta cheese
  • ~2 – Tbsp tzatziki

Recipe:

  1. Combine the rice and chicken broth in a pot and bring to a boil. Once boiling, set a timer for 15 minutes and simmer on low without removing the cover. In the meantime, start the gyro meat:
  2. Sauté the gyro meat over medium heat for about 10 minutes or until its cooked thoroughly.
  3. Finely chop the Roma tomatoes and cucumber
  4. Combine everything and serve topped with feta and tzatziki
