Mediterranean Crostini

Cookware Needed:

  • Oven
  • Baking Sheet
  • Bread Knife

Grocery List:

  • ½ – French Baguette
  • ~8 – oz of tomatoes (I used a spring medley mix, but cherry tomatoes work too)
  • 1 – tsp minced garlic (1 clove)
  • 1 – tsp white wine vinegar
  • 2 – tsp of olive oil (separated)
  • 3-4 – Basil Leaves
  • 1 – small handful of feta cheese
  • Salt
  • Pepper

Recipe:

  1. Finely dice the tomatoes and combine in a bowl with the garlic, vinegar, 1 tsp of olive oil, a pinch salt and pepper, then set aside.
  2. Preheat the oven to 350 F.
  3. Slice ½ of the baguette starting on a diagonal into about ¾ inch slices, this will create 12 ish rounds.
  4. Place the rounds on a baking sheet and drizzle with olive oil (about 1 tsp).
  5. Bake about 10 minutes or until the bread is turning golden brown, then top with the tomato mixture.
  6. Tear or chop the basil leaves and add them to the crostinis.
  7. Finally, top with feta cheese crumbles and serve.
