Cookware Needed:

Grocery List:
- ½ – French Baguette
- ~8 – oz of tomatoes (I used a spring medley mix, but cherry tomatoes work too)
- 1 – tsp minced garlic (1 clove)
- 1 – tsp white wine vinegar
- 2 – tsp of olive oil (separated)
- 3-4 – Basil Leaves
- 1 – small handful of feta cheese
- Salt
- Pepper
Recipe:
- Finely dice the tomatoes and combine in a bowl with the garlic, vinegar, 1 tsp of olive oil, a pinch salt and pepper, then set aside.
- Preheat the oven to 350 F.
- Slice ½ of the baguette starting on a diagonal into about ¾ inch slices, this will create 12 ish rounds.
- Place the rounds on a baking sheet and drizzle with olive oil (about 1 tsp).
- Bake about 10 minutes or until the bread is turning golden brown, then top with the tomato mixture.
- Tear or chop the basil leaves and add them to the crostinis.
- Finally, top with feta cheese crumbles and serve.
