Cookware Needed:
- Mixing Bowl or mixer
- Loaf Pan
- another bowl (2 cup pyrex will do)
Grocery List:
- 3 – ripe bananas
- 1 – egg at room temperature
- ⅓ – cup of melted butter (6 TBSPs or ¾ stick)
- ¼ – cup white sugar
- ½ – cup brown sugar
- 1 ½ – cup all purpose flour
- ½ – tsp baking soda
- ½ – tsp salt
- ½ – tsp vanilla extract (I was out and subbed vanilla coffee syrup, very tasty in a pinch)
- ½ – cup semi-sweet chocolate chips
Recipe:
- Preheat the oven to 350F
- Combine the bananas, butter, sugar, and egg and mix thoroughly.
- In a separate bowl, combine the flour, salt, and baking soda, then slowly add to the banana sugar mixture.
- Add in the vanilla flavoring and then stir in the chocolate chips.
- Scoop the mixture into a parchment paper-lined loaf pan and bake for about 45 minutes. You will know it’s done when a fork comes cleanly out of the center.
- Allow the banana bread to cool, then slice into 3⁄4-1 inch slices.
- Notes:
- if the bananas are too lumpy, try mushing them with a fork
- add in other mix-ins like pecans, walnuts, or other fruit
