Salsa Fresca

Servings: 2½ cups, 5 ish little bowls

Cookware Needed:

  • Veggie Chopper
  • Mixing Bowl

Grocery List:

  • ~ 1 – lb of Ripe Roma Tomatoes (if it’s winter or off season, sub canned diced tomatoes)
  • ½ White Onion
  • 1-2 Jalapeños
  • ~ ¼ – cup Cilantro leaves, or a small handful
  • 1 – tsp Garlic Paste, or 1 Garlic Clove
  • 1 – tsp distilled white vinegar
  • Seasonings to taste (start with ½ tsp)
    • Salt
    • Cumin
    • Mild Chili Powder
    • Red Pepper Flakes

Recipe:

  1. Wash all of the produce and chop with the veggie chopper. Optionally, dice with a knife, or pulse in the blender, but be careful not to over blend.
  2. Add the vinegar, garlic and seasonings and stir.
  3. Serve immediately and keep in the fridge, covered up to a week.
  4. Notes:
    • Spice grows over time. This recipe creates a medium spice level salsa, feel free to add more peppers or try another type like habanero for extra spice.
    • Can add a squeeze of lime for some extra flavor.
