Fall Kickoff Pumpkin Coffee Cake

Cookware Needed:

  • 2.5 Quart Oval Baking Dish
  • Stand Mixer

Grocery List:

Coffee Cake:

  • 1 – stick melted unsalted butter (½ cup or 8 TBSPs)
  • 1 – cup pure pumpkin purée (this is about half of a 15 oz can)
  • 1¼ – cups light brown sugar, packed
  • 2 – eggs
  • 1 – 5 oz container of plain greek yogurt
  • 1 – TBSP vanilla extract
  • 2 – cups all-purpose flour
  • 1 – TBSP pumpkin pie spice
  • 1 – tsp baking powder
  • 1 – tsp baking soda
  • ½ – tsp salt

Cinnamon Streusel

  • 1.5 – cups all-purpose flour
  • 1.5 – cups brown sugar
  • 1 – stick melted unsalted butter (½ cup or 8 TBSPs)
  • 1 – TBSP cinnamon
  • ½ – tsp salt

Optional Glaze or White Icing

  • 1 – cup powdered sugar
  • 2 – TBSP whole milk
  • 1 – tsp vanilla extract
  • 1 – small tube of white icing for decorating

Recipe:

  1. Preheat oven to 350°F
  2. Start the batter for the coffee cake in your stand mixer by combining melted butter, brown sugar, eggs, greek yogurt, vanilla extract, and pumpkin purée and mix well.
  3. In a separate bowl, combine the flour, baking soda, baking powder, pumpkin spice, and salt then slowly add the dry ingredients to the mixer. Be sure to scrape down the sides.
  4. Create the cinnamon streusel, in the bowl you used for the dry ingredients, combine the flour, brown sugar, melted butter, cinnamon and salt and stir until everything is combined.
  5. Butter or grease your baking dish and add in half of the pumpkin batter. Top the batter with a layer of cinnamon streusel, then scoop in the second half of the batter and top with the remaining streusel.
  6. Bake at 350°F for 45-55 minutes, you’ll know its finished when a fork comes out clean.
  7. While the coffee cake is in the oven, create the glaze by combining the powdered sugar, milk, and vanilla extract and whisking well.
  8. Remove the coffee cake from the oven and allow it to cool, top with the glaze and use the small tube of icing to create football laces and details.

Notes:

  • You can line the baking dish with parchment paper instead of using butter, but it’s a little tricky since we’re using an oval dish.
  • This recipe can be made in an 8×8″ baking dish.
  • It’s important to mix the baking powder and baking soda with the other dry ingredients before adding to the mixer to prevent uneven clumps.
