Coffee Cake:
- 1 – stick melted unsalted butter (½ cup or 8 TBSPs)
- 1 – cup pure pumpkin purée (this is about half of a 15 oz can)
- 1¼ – cups light brown sugar, packed
- 2 – eggs
- 1 – 5 oz container of plain greek yogurt
- 1 – TBSP vanilla extract
- 2 – cups all-purpose flour
- 1 – TBSP pumpkin pie spice
- 1 – tsp baking powder
- 1 – tsp baking soda
- ½ – tsp salt
Cinnamon Streusel
- 1.5 – cups all-purpose flour
- 1.5 – cups brown sugar
- 1 – stick melted unsalted butter (½ cup or 8 TBSPs)
- 1 – TBSP cinnamon
- ½ – tsp salt
Optional Glaze or White Icing
- 1 – cup powdered sugar
- 2 – TBSP whole milk
- 1 – tsp vanilla extract
- 1 – small tube of white icing for decorating
Recipe:
- Preheat oven to 350°F
- Start the batter for the coffee cake in your stand mixer by combining melted butter, brown sugar, eggs, greek yogurt, vanilla extract, and pumpkin purée and mix well.
- In a separate bowl, combine the flour, baking soda, baking powder, pumpkin spice, and salt then slowly add the dry ingredients to the mixer. Be sure to scrape down the sides.
- Create the cinnamon streusel, in the bowl you used for the dry ingredients, combine the flour, brown sugar, melted butter, cinnamon and salt and stir until everything is combined.
- Butter or grease your baking dish and add in half of the pumpkin batter. Top the batter with a layer of cinnamon streusel, then scoop in the second half of the batter and top with the remaining streusel.
- Bake at 350°F for 45-55 minutes, you’ll know its finished when a fork comes out clean.
- While the coffee cake is in the oven, create the glaze by combining the powdered sugar, milk, and vanilla extract and whisking well.
- Remove the coffee cake from the oven and allow it to cool, top with the glaze and use the small tube of icing to create football laces and details.
Notes:
- You can line the baking dish with parchment paper instead of using butter, but it’s a little tricky since we’re using an oval dish.
- This recipe can be made in an 8×8″ baking dish.
- It’s important to mix the baking powder and baking soda with the other dry ingredients before adding to the mixer to prevent uneven clumps.
