Peanut Butter Monster Cookies

Cookware Needed:

  • Stand mixer or mixing bowl
  • baking sheet

Grocery List:

  • 1 – stick of unsalted butter (room temperature, ½ cup)
  • 1 – large egg + 1 egg yolk (room temperature)
  • ½ – cup granulated sugar
  • ½ – cup light brown sugar (packed)
  • ¾ – cup peanut butter
  • 1 ½ – cups of old fashioned oats
  • ½ – cup all-purpose flour
  • ½ – tsp baking soda
  • ~¼ – tsp salt
  • ½ – cup semi-sweet chocolate chips
  • ½ – cup m & ms (halloween blend for the pictured batch)

Recipe:

  1. Preheat oven to 350°F
  2. In a stand mixer, combine butter, peanut butter, sugar, brown sugar, and eggs, and mix for a few minutes, be sure to scrape down the sides.
  3. In a separate bowl, combine the dry ingredients: oats, flour, baking soda and salt, and stir until combined.
  4. Slowly add the dry ingredients to the stand mixer.
  5. Fold in the chocolate chips and m&ms.
  6. Scoop heaping Tablespoons onto a baking sheet, and bake for about 9 minutes. Remove when the edges are starting to turn brown and allow the cookies to cool on the baking sheet.
  7. Serve with milk and enjoy!
    • Notes:
      • Dough keeps well in the fridge for a few days
      • This recipe doubles well
      • Nuts, dried fruit, or other chocolates are great add-ins.
