Cookware Needed:
- Stand mixer or mixing bowl
- baking sheet
Grocery List:
- 1 – stick of unsalted butter (room temperature, ½ cup)
- 1 – large egg + 1 egg yolk (room temperature)
- ½ – cup granulated sugar
- ½ – cup light brown sugar (packed)
- ¾ – cup peanut butter
- 1 ½ – cups of old fashioned oats
- ½ – cup all-purpose flour
- ½ – tsp baking soda
- ~¼ – tsp salt
- ½ – cup semi-sweet chocolate chips
- ½ – cup m & ms (halloween blend for the pictured batch)
Recipe:
- Preheat oven to 350°F
- In a stand mixer, combine butter, peanut butter, sugar, brown sugar, and eggs, and mix for a few minutes, be sure to scrape down the sides.
- In a separate bowl, combine the dry ingredients: oats, flour, baking soda and salt, and stir until combined.
- Slowly add the dry ingredients to the stand mixer.
- Fold in the chocolate chips and m&ms.
- Scoop heaping Tablespoons onto a baking sheet, and bake for about 9 minutes. Remove when the edges are starting to turn brown and allow the cookies to cool on the baking sheet.
- Serve with milk and enjoy!
- Notes:
- Dough keeps well in the fridge for a few days
- This recipe doubles well
- Nuts, dried fruit, or other chocolates are great add-ins.
