Cookware Needed:
- Stand Mixer
- 9 x 9″ baking pan
Grocery List:
- 2 – large room temperature eggs
- 1 – large room temperature egg yolk
- ¾ – cup melted butter (1½ sticks)
- 1⅓ – cups granulated sugar
- ½ – cup cocoa powder (I use the Saco Pantry’s dutched blend)
- 2 – TBSPs vegetable oil
- 2 – tsps vanilla extract
- 1 – cup all-purpose flour
- 1 – tsp baking powder
- ½ – tsp salt
- ¾ – cups semi-sweet morsels
Recipe:
- Preheat oven to 350°F
- In a stand mixer, combine the eggs, melted butter, sugar, cocoa powder, vegetable oil, and vanilla extract and mix for 1 minute.
- In a separate small bowl, combine the flour, salt, and baking powder.
- Slowly add the flour mixture to the stand mixer and let it run just until everything is almost incorporated; it’s okay if you still see a few streaks of ingredients, but we don’t want to overmix.
- Remove the mixing bowl from the stand mixer and fold in the semi-sweet morsels or any other mix-ins.
- Transfer the batter to a greased 9 x 9″ pan and bake for 28 minutes. Serve warm with milk.
Notes:
- Try nuts, mints, or other chocolates for mix-ins.
