Cookware Needed:
- 9 x 9 baking pan
- Stand mixer or mixing bowl
- microwave-safe bowl
Grocery List:
- 1½ – sticks melted butter
- ¾ – cup light brown sugar
- 1 – cup all-purpose flour
- 1 – cup old-fashioned oats
- 1 – tsp baking soda
- ½ – tsp salt
- ½ – cup heavy cream
- 1 – 11oz package of caramel bits for baking
- 1 – cup semi-sweet chocolate chips
Recipe:
- Preheat oven to 350°F
- In a stand mixer or mixing bowl, combine the butter, brown sugar, flour, oats, baking soda, and salt, and stir until combined.
- Line a 9×9 metal baking pan with tin foil. (You can just spray with cooking spray, but the caramel gets pretty gooey, so I recommend lining the pan)
- Put half of the oats mixture into the baking pan and spread it until it’s an even layer. Bake for 10 minutes while you start the caramel sauce.
- In a microwave-safe bowl, combine the caramel bits and heavy cream. Microwave for about 2 minutes total, in 30-second increments, and stir frequently. The caramels will combine smoothly with the heavy cream.
- Remove the pan from the oven and top the first layer of oats with chocolate chips. Then, pour over the caramel sauce. Finally, top with the remaining oats mixture. Be sure to crumble it with your hands to avoid big clumps.
- Bake for 15-18 minutes or until the top is golden brown.
- Allow the carmelitas to cool before attempting to cut.
Notes:
- Optionally, add 1 tsp of vanilla extract
- Optionally, add chocolate chunks, nuts, or any other favorite mix-ins before topping with the second layer of oats
