Chicken Parmesan

Cookware Needed:

  • Air fryer
  • Baking dish dish

Grocery List:

  • 2 – large chicken breasts (totalling 1-1.5 lbs)
  • 1 – 23 oz jar of marinara
  • 1 – large egg
  • ~¼ – cup flour
  • ~¼ – cup Italian bread crumbs
  • 4 – oz shredded mozzarella cheese

Recipe:

  1. Cut each chicken breast in half lengthwise to create thinner pieces.
  2. Crack the egg into a bowl and add a splash of water. Mix well with a fork.
  3. Bread the chicken starting with flour, then dunking it in the egg wash, then breadcrumbs.
    • Note: the cleanest way to do this is to maintain a dry hand and a wet (after egg) hand.
    • Optionally add shredded cheese, garlic, and other seasonings to the bread crumbs if yours are plain.
  4. Air fry the chicken for 13 minutes at 370F, meanwhile, preheat the oven to 350 F.
  5. Pour half of the marinara into the baking dish, followed by the cooked chicken, then the rest of the marinara. Top with shredded cheese and bake for 10 minutes.
  6. Optionally, broil on high for 2 minutes at the end to brown the cheese.

Notes:

  • Leftovers keep well in the fridge for a few days.
  • Try serving with pasta or garlic bread.
