Cookware Needed:
- Air fryer
- Baking dish dish
Grocery List:
- 2 – large chicken breasts (totalling 1-1.5 lbs)
- 1 – 23 oz jar of marinara
- 1 – large egg
- ~¼ – cup flour
- ~¼ – cup Italian bread crumbs
- 4 – oz shredded mozzarella cheese
Recipe:
- Cut each chicken breast in half lengthwise to create thinner pieces.
- Crack the egg into a bowl and add a splash of water. Mix well with a fork.
- Bread the chicken starting with flour, then dunking it in the egg wash, then breadcrumbs.
- Note: the cleanest way to do this is to maintain a dry hand and a wet (after egg) hand.
- Optionally add shredded cheese, garlic, and other seasonings to the bread crumbs if yours are plain.
- Air fry the chicken for 13 minutes at 370F, meanwhile, preheat the oven to 350 F.
- Pour half of the marinara into the baking dish, followed by the cooked chicken, then the rest of the marinara. Top with shredded cheese and bake for 10 minutes.
- Optionally, broil on high for 2 minutes at the end to brown the cheese.
Notes:
- Leftovers keep well in the fridge for a few days.
- Try serving with pasta or garlic bread.
