Spinach Tortillas

Servings: 6 tortillas

Cookware Needed:

  • Mixing bowl or stand mixer
  • Blender
  • 10″ frying pan

Grocery List:

  • 2-3 – cups spinach leaves
  • ½ – cup of warm water
  • 2 – TBSPs olive oil
  • 2 – cups All Purpose flour
  • ½ – tsp salt

Recipe:

  1. Blend the spinach, water, and olive oil until smooth.
  2. Combine the flour and salt in a bowl, then pour in the spinach mixture and stir until a dough is formed.
  3. Divide the dough into 6 equal pieces and roll out on a floured surface.
  4. Cook over medium heat for about 1 minute per side. Bubbles may form, and the tortilla will move freely in the pan.

Notes:

  • I store these in a beeswax-lined bread bag.
  • Use these to create fun wraps or quesadillas. My go-to is a chicken Caesar wrap!
